You guys! I never even considered being able to replace the egg in french toast until I was scrolling through aquafaba recipes to see what other cool ways I could use it in my vegan cooking and I came across a recipe for french toast. Um, yes please. I'll try that. So I thought about the fact that I hadn't had it in so long and I imagined it with oranges and strawberries for some reason. Well...it didn't disappoint. The orange zest, juice and strawberries gave it a fresh, light, slightly sweet flavor and the aquafaba gave it the perfect texture and golden brown crust. This recipe makes a pretty big batch so you can serve a family of four or use it to meal prep breakfast for the week. It keeps well in the fridge and can be warmed up in the toaster oven. Ingredients for Gluten-free and Vegan Strawberry Orange French Toast.

Ingredients

3/4 cup of unsweetened coconut milk
1/4 cup coconut flour
1/2 cup of aquababa (the liquid from a can of garbanzo beans)
1 tablespoon of pure maple syrup
1/2 tsp of orange zest
1 tablespoon of fresh squeezed orange juice
pinch of salt
8 slices of gluten free/vegan bread of your choice (I like Food For Life's Rice/Millet Bread)
1 cup of sliced strawberries

Cooking Gluten-free and Vegan Strawberry Orange French Toast

Directions

  1. Mix all of the ingredients together in a large bowl that's big enough to dunk your bread slices in. 

  2. Preheat a skillet over medium-high heat with a little drizzle of coconut oil. 

  3. Dip each slice of bread in the aquafaba mixture until both sides are well coated. Pick up with tongs and let the excess liquid drain off. Place in the skillet and cook until golden brown on each side and no longer totally soggy in the middle. Keep a close eye on it. It doesn't take long. 

  4. Place it on a plate. Cover with strawberries, sprinkle with cinnamon and drizzle with pure maple syrup. Serve with a side of orange slices. 

  5. To reheat for future breakfasts, just pop them in the toaster oven for a few minutes until warm.
