Garden Zucchini Noodles Recipe

A lot of people ask me what "diet" I recommend. That's a difficult question to answer for two reasons. 1. I don't diet (as in deprive myself). 2. Everyone's body is unique with unique nutritional needs and sensitivities. You have to choose what works for you and that can take time to figure out. It means slowing down and being intentional about your food choices and doing your best to consistently choose the things that make you feel alive and to weed out or limit the things that make you feel groggy, sluggish, bloated, sleepy, etc. 

In general, a good rule of thumb is to simply start focusing on whole foods.  Whole foods are as close to their original state as possible. The are nutrient dense and create lasting energy and optimal health.

By comparison, refined, processed and packaged foods are often low calorie, but only because they contain so few nutrients. They're "empty foods" and they leave you feeling empty, overfed and undernourished.

Here's an easy recipe you can put together in 15 minutes or less that will fill you up with flavor and nutrients.

Ingredients

1 small zucchini spiralized
1 large handful of spinach or other dark leafy greens
3-4 cherry tomatoes sliced
1 tablespoon of raw walnuts chopped (or nut of your choice)
1 tablespoon of olive oil
1 clove of garlic minced
sea salt and black pepper to taste

Directions

Heat olive oil in a skillet. Add minced garlic and let cook for 1-2 minutes stirring to infuse the flavor into the oil. Add zucchini and spinach and warm through. Place in plate, sprinkle with tomatoes and nuts. Season to taste with sea salt and black pepper and enjoy. 

Variations:

Consider adding a small piece of baked salmon, shredded chicken or even leftover ground turkey or grass-fed ground beef.
