Dairy Free Whipped Chocolate Mousse
Subscription boxes, especially those related to food, always make me hesitant. We eat pretty healthy and we're mostly dairy free and completely gluten-free. I've wasted money on boxes in the past that came with food we couldn't make work for our family's needs.
But recently, I discovered Raddish Cooking Club for Kids and we are loving it! The monthly box doesn't actually include food, but it provides multiple healthy and easy to adjust (if necessary) recipe cards, aprons, a kitchen skill card, patches for the skill they learn that they can iron on to their aprons and even little table talk cards to get the dinner conversation started. The best part, there are fun science lessons incorporated into the cooking lessons. My boys are excited about cooking and trying their food and are already looking forward to next months recipes and lessons.
Ok, now what you've been waiting for. The Dairy Free Chocolate Mousse Recipe.
Ingredients:
1 cup Enjoy Life dark chocolate mini chocolate chips (plus some for sprinkles)
1/4 cup water
1 1/2 cups of coconut cream (I use 2 cans of organic full fat coconut milk. Refrigerate it overnight and scoop out just the cream for the recipe.)
Directions:
Place your chocolate chips into a large mixing bowl. Bring water to a boil in a small sauce pan over high heat. Once boiling, pour the water over your chocolate chips and stir until smooth. Set aside to cool for at least 10 minutes.
While the chocolate is cooling, pour the cold cream into a metal mixing bowl and whip on medium0high using either a handheld or stand mixer. (The edible experiment was for the kids to note what happens to cold cream when it is whipped vigorously.) Whip until cream thickens, then check for soft peaks. The cream is done when the peaks stand straight and firm.
Gently fold 1/3 of the whipped cream into the cooled chocolate to start. Next fold 1/2 of the remaining whipped coconut cream into the bowl until the white streaks vanish. Scoop into serving dishes and garnish with the remaining whipped cream and a sprinkle of Enjoy Life chocolate chips. Refrigerate for at least 1 hour and enjoy!
