Coconutty Breakfast Sweet Potato
I almost can't even call this a recipe, but you guys went crazy for the photo on my Instagram story so I thought the easiest way to share how I made it was to put it in a blog post. This has been one of my regular go to breakfast addition during 80 Day Obsession. Along with my healthy protein and veggies :)
The sweet potato (I rotate between the traditional orange and the more rare purple) is loaded with nutrients and antioxidants and it keeps me full and energized for my morning workouts. The almond butter is a healthy source of good fat and obviously adds a little natural sweetness and creamy deliciousness. The shredded coconut is there mostly for flavor and a little texture, but it also contains protein, fiber, iron and zinc.
But back to our base...the sweet potato...all varieties help regulate blood sugar and are high in fiber. They're also loaded with vitamins A and C and are a great source of B6, which is one of our mood vitamins and can help regulate the good feeling we get from having adequate levels of serotonin.

Coconutty Breakfast Sweet Potato
Ingredients
Sweet potato of your choice (I love the purple ones)
Coconut oil
1 tsp of unsweetened almond butter
1 TBSP unsweetened shredded coconut
Paprika
Tumeric
Cinnamon
Instructions
Preheat the oven to 400 degrees. Rinse the potato and cut it in half. Massage a very small amount of organic, unrefined coconut oil onto the top of each side of the potato and sprinkle with generous amounts of paprika, tumeric and cinnamon.
Place skin side down on a baking sheet lined with parchment paper and bake for 30-35 minutes or until the center of the potato is easily pierced with a fork.
Remove from the oven and top with almond butter and coconut.
Notes
I prep these in bulk for the week and keep the potato halves in the fridge. I take them out for breakfast each morning and top as described, but don't be afraid to get creative. Some of my other favorite toppings are hemp hearts, goji berries, apple slices and dried blueberries.
