Black Bean Spinach Brownies ...no really, they're good!
When your client says, "Help me get more veggies into my kids and introduce them to healthier snacks. They're favorite food is Cheez-Its." You make them these brownies. Nutrient dense, rich, fluffy brownies loaded with spinach and black beans that my kids have yet to detect.
Here's how to make them.
Ingredients
1 (15oz) box of reduced sodium black beans, rinsed and drained
1 cup of fresh spinach
3 eggs
3 Tablespoons of coconut oil
3/4 cups of coconut sugar
1 teaspoon of honey
1/2 cup of cocoa powder
1 tsp vanilla extract
1/2 tsp baking powder
1/8 tsp pink himalayan sea salt
1/4 cup semi-sweet chocolate chips or dark chocolate chips
Instructions
Preheat the oven to 350 degrees. Grease an 8x8 glass baking dish with coconut oil or line with parchment paper.
Put the black beans, spinach, and eggs i a food processor and process until completely smooth. The key is to scrape down the sides and make sure there is no evidence of the beans or spinach!
Add the coconut oil, sugar, cocoa powder, vanilla extract, baking powder and salt. Process again until well combined and smooth.
Transfer to the prepared baking dish and sprinkle with chocolate chips and bake for 25 minutes or until a tooth pic comes out clean.
Allow to cool completely before cutting and serving.
