Banana Pudding

Child eating Banana Pudding

This is the such a healthy, easy recipe that you can whip up in less than 5 minutes with a blender and 5 ingredients. I love making a triple batch and keeping it in the fridge for the kids (and myself!) so we have something fast and satisfyig that we can grab when we're craving a little treat.

We have family in town for spring break this week and I made sure to stock the fridge with this creamy, deliciousness and lots of toppings. It's been a huge hit with all the kids!

Ingredients

3 bananas
1 tablespoon tahini
1/4 cup of pure maple syrup
1 teaspoon vanilla extract
sprinkle of cinnamon

Toppings

Really it's whatever you can dream up, but some that we really like are:

Unsweetened shredded coconut
Berries
Chopped nuts
Enjoy Life mini dark chocolate chips

Directions

Combine all of the ingredients, except your toppings, in a blender and puree until smooth. Transfer to small containers or mason jars and chill in the fridge for at least a few hours, but I find it's best chilled overnight. Top to taste!
