Baked Grapefruit (with honey and cinnamon or honey and mint)
I've been trying to find new ways to satisfy everyone's sweet tooth with out caving to processed, unhealthy desserts and overly sweet treats that only feed and intensify sugar cravings. This recipe has been popular with everyone in our house.
This is a super easy add to your morning breakfast routine or a flavorful post-dinner dessert. Baking grapefruit really brings out it's natural sugars and cuts the bitterness. The addition of honey and cinnamon add extra sweetness making it even more kid friendly.
INGREDIENTS
1 grapefruit - halved
1 tablespoon honey
½ teaspoon cinnamon
DIRECTIONS
Step 1: Preheat the oven to 375 F. Wash and cut the grapefruit in half. Using a pairing knife, trace the sections of the grapefruit to help separate them. This will make it easier to eat when it comes out of the oven.
Step 2: Drizzle each half of the grapefruit with ½ tablespoon of honey and sprinkle with cinnamon.
Step 3: Bake at 375 F for 15 minutes.
Step 4: Remove the grapefruit from the oven and allow it to cool before serving. If it’s easier for your kids, you can remove the grapefruit sections for them and serve the pieces in a bowl. Mine prefer to dig them out themselves. It’s part of the fun of eating grapefruit!
